The Jonkershoek Valley and more specifically the south facing slopes are of the coolest sites in Stellenbosch. The vineyards are also influenced by southerly breezes during the summer months which has a beneficial effect. Further parcels of fruit are sourced from complimentary sites within the Stellenbosch area.
The Vineyards
Trellised vineyards with supplementary irrigation grown on mainly decomposed granite soils.
Grape varieties
55% Cabernet Sauvignon and 45% Merlot
Winemaking
Harvest commenced on 25 February and completed on 20 March. Grapes were harvested between 24.2°B and 25.6°B with a total acid of 5.9 g/l and a pH of 3.62.
Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing. This wine spent 15 months in French oak barrels of which 20% was new. The balance in 2nd and 3rd fill barrels.
Bottled in November 2010.

Tasting notes
Vibrant colour with youthful purple hues. Bright aromatic sweet fruit with spicy varietal notes. Fine, elegant, nicely framed, attractive palate with cedary undertones. |
